Vegan Bacon Made from Carrots

Quick and easy to make as a topping for sandwiches, salads or for breakfast.

Preparation

1. Prepare the carrots:
Peel the carrots and cut into thin, long strips using a vegetable peeler or knife.

2. Prepare the marinade:
In a bowl, mix together the soy sauce, olive oil, agave syrup, liquid smoke, tomato paste and all the spices until well combined.

3. Marinate the carrots:
Add the carrot strips to the marinade, mix well and leave to marinate for at least 20 minutes - overnight if you like for a more intense flavor.

4. Bake:
Preheat the oven to 200 °C (top/bottom heat). Place the marinated carrot strips on a baking tray lined with baking paper without overlapping.

5. Bake until crispy:
Bake the strips for 10-15 minutes, checking occasionally to make sure they don't burn. Then remove from the oven and leave to cool slightly - they will become even crispier as they cool!

  • 1 tsp paprika powder
  • 0.5 tsp pepper
