Vegan Marzipan Baked Apples with Nuts

The oven classic: Juicy apples, a sweet marzipan filling, and fine cinnamon – completely plant-based and easy to make.

Preparation

1. Preparation:
Preheat the oven to 180°C top/bottom heat. Grease a baking dish with a little margarine.

2. Core the Apples:
Wash the apples. Generously remove the core using an apple corer. If you do not have a corer, use a small knife and a teaspoon.

3. The Filling:
Crumble the marzipan into small pieces. Knead together with the nuts, raisins, cinnamon, and maple syrup in a bowl until a homogeneous mixture forms.

4. Stuffing:
Firmly press the marzipan mixture into the openings of the apples.

5. Baking:
Place the apples in the baking dish. Pour the apple juice onto the bottom of the dish to keep the apples juicy. Top each apple with a small dot of margarine.

6. Duration:
Bake in the oven for 25 to 35 minutes until the skin slightly bursts and the apples are tender.

And that goes great with a creamy vanilla sauce:

1. Mix the Starch:
In a small bowl, whisk the cornstarch with 2 to 3 tablespoons of the cold oat milk until smooth and free of lumps.

2. Heat the Milk:
Pour the remaining oat milk into a small saucepan along with the maple syrup, plant margarine, vanilla, and turmeric, and bring to a simmer over medium heat.

3. Thicken the Sauce:
Reduce the heat slightly and whisk in the dissolved cornstarch mixture, stirring constantly.

4. Simmer and Serve:
Let the sauce bubble up briefly while stirring until it thickens into a rich, creamy consistency. Remove from heat and pour the warm vanilla sauce generously over the finished baked apple.

Ingredients:

  • 4 large apples (preferably tart varieties like Boskoop or Braeburn)
  • 100 g raw marzipan paste
  • 30 g chopped almonds or walnuts
  • 2 tbsp raisins (optional, soaked in rum or apple juice)
  • 1 tsp cinnamon
  • 2 tbsp maple syrup or agave nectar
  • Some vegan margarine (for the dish and as dots on top)
  • 150 ml apple juice (for the bottom of the dish)

Vanilla Sauce

  • 250 ml creamy oat milk or soy drink
  • 1 tbsp maple syrup or agave nectar
  • 1 tsp plant-based margarine (optional for richness)
  • 1 tsp real vanilla bean paste or vanilla extract
  • 1 tsp cornstarch
  • 1 pinch of turmeric (for that golden color)
