Asian Plum Sauce (Vegan)

Preparation
1. Prepare the plums:
Pit the plums, chop them into small pieces, and place them in a container with the water.
2. Sauté the aromatics:
Heat the sesame oil in a pot. Add the garlic, ginger, and optional chili flakes, and sauté for 1–2 minutes over medium heat until fragrant.
3. Simmer the sauce:
Add the chopped plums, rice vinegar, soy sauce, and sugar. Let everything simmer over medium heat for 10–15 minutes until the plums are soft and the sauce begins to thicken.
4. Blend until smooth:
Use an immersion blender or transfer to a standard blender to purée the sauce until smooth. For an extra-silky finish, strain through a fine mesh sieve.
5. Thicken (optional):
If the sauce is still too thin, mix the cornstarch with water and stir it into the sauce. Bring to a gentle boil until the desired consistency is reached.
6. Cool and serve:
Allow the plum sauce to cool slightly. Store it in an airtight container in the fridge for up to 1 week. Delicious served warm or cold!
Tip:
This sauce freezes beautifully – perfect for meal prep! It also makes a fantastic glaze for roasted vegetables or vegan burger patties.

- 1–2 tbsp brown sugar (adjust to taste)
- 1 tsp sesame oil
- ½ tsp chili flakes (optional, for mild heat)
- 1 tsp cornstarch + 2 tbsp water (for thickening)
