Chickpea “Tuna” on Bread (vegan)

Deliciously savory, super quick, and packed with protein.

Preparation

1. Prepare the chickpeas:
Drain the canned chickpeas, rinse thoroughly, and place them in a bowl. Roughly mash with a fork, leaving some texture.

2. Mix the cream:
Add the vegan mayonnaise and lemon juice to the chickpeas. Mix well until a creamy but not completely smooth consistency is achieved.

3. Season:
Season with salt and pepper and add more lemon juice to taste.

4. Assemble the bread:
Optionally toast the bread or toast slices briefly. Generously spread the chickpea “tuna” mixture on the slices and serve immediately.
