Couscous Salad with Raisins and Walnuts

A tasty side dish or full meal for a quick lunch break or as a highlight on a buffet.

Preparation

1. Prepare the couscous:
Place the couscous in a bowl and mix with the raisins, chopped walnuts and spices of your choice.

2. Add water:
Pour the hot water over the mixture, stir well and cover the bowl with a lid or plate.

3. Leave to swell:
Leave the couscous to swell for about 5 minutes until the water is completely absorbed.

4. Season to taste and serve:
Fluff up the couscous with a fork, season if necessary and enjoy straight away.

Ingredients:

  • 100 g couscous
  • 100 ml hot water
  • 2 tbsp raisins
  • 2 tbsp walnuts (roughly chopped)
  • 1 tsp vegetable stock, curry spice mix or salt & pepper (to taste)
