Preparation
1. Prepare the quinces:
Wash the quinces thoroughly, peel them, and remove the cores. Cut the flesh into small pieces and drizzle with lemon juice immediately to prevent browning.
2. Prepare the syrup:
Place the water, cinnamon stick, cloves, and star anise in a large pot. Bring to a boil to release the flavors.
3. Cook the quinces:
Add the prepared quince pieces to the pot, bring to a boil, and then simmer over low heat until they are soft and slightly transparent (about 20–30 minutes).
4. Fill into jars:
Fill the soft quinces together with the syrup into sterile screw-top jars, seal immediately and turn upside down until they have cooled down.
