Roasted Radicchio (vegan)

Preparation

1. Prepare the radicchio:
Clean the radicchio, divide into six equal pieces and rinse under running water.

2. Chop the ingredients:
Peel the garlic clove and onions, then chop finely.

3. Sauté the radicchio: 
Heat the olive oil in a large frying pan. Fry the radicchio pieces on all sides for about 5 minutes until golden brown. Then remove and set aside.

4. Sauté the onions and garlic:
Add the onions and garlic to the pan and sauté over a medium heat until translucent.

5. Prepare the stock:
Add the agave syrup to the pan and sauté briefly. Deglaze with balsamic vinegar and simmer for 2 minutes.

6. Refine the radicchio:
Return the sautéed radicchio pieces to the pan and toss in the balsamic vinegar until they are completely coated.

7. Serve: 
Place toasted wholemeal bread slices on the plates. Arrange the radicchio on top, sprinkle with vegan parmesan and season with salt and pepper to taste.

  • 500 g radicchio
  • 1 clove of garlic
  • 2 onions
  • 15 g vegan parmesan
  • 1 tbsp agave syrup
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • salt
  • pepper
  • bread on the side
