Caramelized Chili Brussels Sprouts (vegan)

Preparation

1. Prepare the Brussels sprouts:
Clean the Brussels sprouts, remove the outer leaves and cut the stalks crosswise. Steam in a steamer basket or in lightly salted water for approx. 6-8 minutes until al dente.

2. Stir the sauce:
Heat a little oil in a large pan. Briefly fry the finely chopped garlic in it until fragrant - do not let it brown! Then add the salt, pepper, chili flakes, agave syrup and vinegar and stir well.

3. Glaze the Brussels sprouts:
Add the pre-cooked Brussels sprouts to the pan and toss in the sauce over a medium heat for 5-7 minutes until nicely caramelized. Stir occasionally so that nothing burns.

4. Serve:
Serve the caramelized chilli Brussels sprouts hot immediately - as a spicy side dish, in Buddha bowls or with rice, millet or couscous, or simply on their own.

Ingredients:

  • 300-350 g fresh Brussels sprouts
  • 1 tbsp oil for frying
  • 1 clove of garlic
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp chili flakes (more or less to taste)
  • 2 tbsp agave syrup (or maple syrup)
  • 1 tsp vinegar (e.g. apple cider vinegar or rice vinegar)
