Preparation

Alcoholic Version

1. Prepare the spices:
Get the cloves and cinnamon ready. Wash an untreated lemon with hot water, dry it and peel thin strips of zest if desired.

2. Mix the alcoholic base:
Add 4 cl Scotch (or bourbon/whiskey) to each of two heatproof glasses. Add ½ tsp lemon juice and ½ tsp maple syrup per glass.

3. Add hot water:
Heat 400 ml water (do not boil heavily) and divide between both glasses.

4. Let it infuse:
Add 2 cloves and some cinnamon to each glass. Stir gently and let infuse for 3–5 minutes.

5. Garnish & serve:
Finish with fresh lemon zest and serve hot.

Alcohol-Free Version (Mocktail):

1. Heat the base:
Warm 400 ml cloudy apple juice or strong black tea in a small saucepan (do not boil).

2. Add spices:
Add maple syrup, lemon juice, cinnamon, cloves and fresh ginger.

3. Infuse:
Let steep for about 5 minutes.

4. Serve:
Pour into two heatproof glasses and garnish with lemon zest.

  • 8 cl Scotch
  • 1 tsp maple syrup
  • 1 tsp lemon juice
  • 4 cloves
  • 1 tsp cinnamon or 1 small cinnamon stick
  • 400 ml hot water
  • Optional: lemon zest

Alcohol-Free Version

  • 400 ml hot cloudy apple juice or strong black tea
  • 2 tbsp maple syrup
  • 2 tsp lemon juice
  • 1 tsp cinnamon or 1 cinnamon stick
  • 4 cloves
  • 2 slices fresh ginger
  • Optional: Lemon zest
