Tofu Fillet à la Bordelaise with Lemon Mustard Sauce (vegan)

Preparation

1. Prepare the tofu:
Press the tofu well to remove excess moisture. Then cut it horizontally into two thin fillets. Lightly grease a baking dish and place the tofu slices inside.

2. Add the nori:
Cut the nori sheet to match the size of the tofu slices and lay it on top. This gives the dish its signature “seafood” flavor.

3. Make the crust:
Finely chop the onion and sauté it in vegan margarine until translucent. Add the breadcrumbs and toast until golden brown. Remove from heat and stir in paprika, garlic powder, nutritional yeast, lemon juice, vegan yogurt, salt, pepper, and chopped parsley. Spread the mixture evenly over the tofu.

4. Bake:
Place the baking dish in a preheated oven at 200°C (392°F) and bake for about 15 minutes, or until the crust is nicely crisp.

5. Prepare the lemon mustard sauce:
Finely chop the onion and garlic and sauté in margarine until soft. Stir in the flour and cook briefly. Add the water and whisk until smooth. Then add plant-based cream, mustard, lemon juice, salt, pepper, and dill. Simmer for a few minutes while stirring until the sauce thickens.

6. Serve:
Place one tofu fillet on each plate. Generously spoon over the warm lemon mustard sauce. Serve with potatoes, peas, or a fresh side salad for a complete meal.

  • 1 tsp garlic powder
  • 1 tbsp nutritional yeast
  • Juice of half a lemon
  • 5 tbsp vegan yogurt
  • Salt and pepper

For the lemon mustard sauce:

  • 1 onion
  • 1 garlic clove
  • 2 tbsp vegan margarine
  • 2 tbsp flour
  • 75 ml water
  • 125 ml plant-based cream or milk
  • 1 tsp mustard
  • Juice of half a lemon
  • Fresh or dried dill
  • Salt and pepper

Optional sides:

  • Potatos
  • Peas
  • Fresh salad
