Vegan Apple Pie with Cinnamon Crumble

Preparation
1. Preheat the oven & prepare the springform pan:
Preheat the oven to 180 °C top/bottom heat. Grease a springform pan or line with baking paper.
2. Prepare the dough:
Mix the sugar, flour, vanilla sugar, baking powder, salt and cinnamon in a bowl. Add the plant-based milk, sparkling water and oil and mix everything into a smooth batter.
3. Pour the batter into the tin:
Pour the batter into the prepared springform pan and spread evenly.
4. Prepare the apples:
Peel and core the apples and cut into wedges. Spread evenly over the dough.
5. Knead the crumble dough:
Knead the flour, margarine, sugar and cinnamon in a bowl until crumbles form.
6. Sprinkle the crumble over the cake:
Spread the crunchy cinnamon crumble generously over the apples.
7. Bake the cake:
Bake the cake for approximately 60 minutes until the crumble is golden brown and deliciously fragrant.
8. Leave to cool & enjoy:
Allow the apple crumble cake to cool before cutting - it tastes best then!
