Vegan Butter Cookies

Preparation

1. Make the dough:
In a large mixing bowl, mix the sugar, vanilla sugar and vegan margarine with a hand mixer or food processor until creamy. Then add the flour and knead into a smooth dough.

2. Chill the dough:
Shape the dough into a ball, wrap in cling film and leave to rest in the fridge for at least 30 minutes. This will make it easier to roll out the dough later.

3. Roll out the dough & cut out:
Roll out the chilled dough to a thickness of about 0.5 cm on a lightly floured work surface. Cut out cookies using cookie cutters of your choice and place on a baking tray lined with baking paper.

4. Bake:
Bake the cookies in a preheated oven at 180 °C top/bottom heat for approx. 12-15 minutes until lightly golden. Then leave to cool completely.
