Preparation
1. Prepare the tofu:
Press the tofu well with a clean cloth or tofu press to remove excess liquid. Then cut into bite-sized cubes.
2. Coat the tofu with cornstarch:
Place the tofu cubes in a container with a lid together with the cornstarch. Shake well until all the pieces are completely coated – this will ensure a particularly crispy texture later on.
3. Fry or deep-fry the tofu:
Fry in a pan with a little oil until golden brown (approx. 5–7 minutes) or, alternatively, bake in an air fryer at 180°C for about 15 minutes until crispy.
4. Sauté the seasoning base:
Heat a little oil in a separate pan. Briefly roast the garlic, ginger, and chili flakes until fragrant (do not let it overcook).
5. Season the tofu:
Add the crispy tofu to the pan and deglaze with the soy sauce. Stir well to ensure all the cubes are evenly coated.
6. Add fresh herbs:
Finally, stir in the spring onions or chives and fry briefly – done!
7. Serve:
Serve the fried tofu immediately while it's hot with rice, in a bowl, as a filling for wraps or with Asian noodles.
