Vegan Nut Banana Bread

Why not make a Sunday breakfast or picnic with this moist, nutty and fruity banana bread?

Preparation

1. Chop the nuts and chocolate:
Roughly chop the cashew nuts, walnuts and dark chocolate in a blender.

2. Prepare the dough:
Place the remaining ingredients in a bowl and mix with the chopped nuts and chocolate until you have a smooth batter.

3. Pour the batter into the tin:
Grease a loaf tin and pour in the batter.

4. Add the banana as a topping:
Cut the banana in half lengthways and place on top of the batter.

5. Bake:
First bake the banana bread for 30 minutes at 180 °C, then finish baking for a further 20 minutes at 150 °C.

For the dough:

  • 30 g dark chocolate
  • 40 g cashew nuts
  • 30 g walnut kernels
  • 70 g soft rolled oats
  • 2 ripe bananas
  • 120 ml agave syrup
  • 70 g coconut oil
  • 60 ml plant milk
  • 1 tbsp vinegar
  • 170 g flour
  • 1 sachet baking powder
  • 1 tsp cinnamon

For the topping:

  • 1 banana
