Crispy Vegan Broccoli Fritters (Oven-Baked)

Preparation
1. Prepare the broccoli:
Finely chop the raw broccoli (including the peeled stalk) or pulse briefly in a food processor until it resembles rice. Do not over-process.
2. Mix the base:
Combine broccoli rice with diced onion, garlic, flour, oats, nutritional yeast, mustard, and spices in a large bowl.
3. Knead & rest:
Knead well with your hands. If too dry, add 1–2 tbsp water. Let rest for 10 minutes so the oats can absorb moisture.
4. Shape:
Form 10–12 small flat patties with slightly wet hands and place them on a lined baking tray. Brush with olive oil if desired.
5. Bake:
Bake at 200°C (390°F) for 20–25 minutes until golden brown. Flip halfway through.
6. Prepare the dip:
Mix vegan yogurt, tahini, lemon juice, zest, and herbs until smooth. Chill until serving.
