Fresh Lentil Salad with Lemon & Arugula (vegan)

Preparation

1. Prepare the vegetables:
Wash and dice the cucumber, wash and halve or chop the tomatoes. Wash and spin-dry the arugula.

2. Prepare the lentils:
Place the cooked lentils in a sieve, rinse briefly with water and drain well.

3. Mix the dressing:
Mix the lemon juice with olive oil and salt in a small bowl until you have a smooth dressing.

4. Mix the salad:
Place the lentils, cucumber, tomatoes and arugula in a bowl, pour the dressing over the top and mix everything together carefully.

5. Season to taste & serve:
Season with a little salt or lemon juice as needed and serve fresh.

•    Juice of ½ lemon
•    1–2 tbsp olive oil
•    Salt to taste
