Amaranth Pudding with Sweet Grapes

Preparation
1. Cook the amaranth
Add the amaranth and plant milk to a small saucepan and bring to a boil. Reduce the heat and let it simmer gently for 20–25 minutes, stirring occasionally. The amaranth will remain slightly crunchy – this is normal and part of its texture.
2. Prepare & cook the grapes
While the amaranth is cooking, wash and halve the grapes. Heat the agave syrup in a small pan until liquid. Add the grapes and lemon juice and gently toss for 2–4 minutes, until the grapes soften and become glossy.
3. Finish the amaranth pudding
Once the amaranth is cooked, stir in agave syrup and a pinch of cinnamon until creamy and pudding-like.
4. Assemble & serve
Spoon the warm amaranth pudding into bowls and top with the warm sweet grapes. Serve immediately.
