
Crêpes with Tofu Quark Filling and Orange Sauce

Preparation
1. Mix the crepe batter:
Mix the flour, baking powder, vanilla sugar, sugar and salt in a bowl. Add the plant milk and sparkling water, stir until smooth.
2. Fry the crepes:
Lightly oil and heat a frying pan. Add one ladle of batter per crepe, spread thinly and fry for around 1-2 minutes per side until golden brown.
3. Prepare the tofu and quark filling:
Place the tofu and powdered sugar in a blender and puree until a creamy consistency is achieved. Spread onto the crepes.
4. Fill and roll the crepes:
Spread each crepe with the tofu and quark mixture and roll up tightly.
5. Simmer the orange sauce:
Place the chopped oranges and gelling sugar in a pan. Simmer over a medium heat for about 10 minutes until the sauce has thickened.
6. Serve:
Arrange the crepes on plates, drizzle with warm orange syrup - ready to enjoy!
