Vegan Carrot Cake

Preparation

1. Preheat the oven:
Preheat to 180°C (350°F). Lightly grease a loaf pan or line with parchment paper.

2. Prepare carrots:
Finely grate the carrots. The finer they are, the moister the cake will be.

3. Mix dry ingredients:
Combine flour, ground almonds and baking powder in a large bowl.

4. Add wet ingredients:
Add oil, applesauce and vinegar. Mix well until combined.

5. Fold in carrots:
Gently fold the grated carrots into the batter.

6. Fill the pan:
Pour the batter into the prepared loaf pan and smooth the top.

7. Bake:
Bake for about 50 minutes. Insert a toothpick – if it comes out clean, the cake is ready.

8. Cool:
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
