Swiss Style Vegan Rösti - Hash Browns

The Classic from the Potato Kitchen - Simple and Deliciously Crispy.

Preparation

1. Prepare the potatoes:
Peel and roughly grate the potatoes. Place the grated potatoes in a clean kitchen towel and squeeze out the excess liquid thoroughly - the drier the potatoes, the crispier the rösti will be.

2. Mix the mixture:
Place the squeezed potatoes in a bowl. Add the flour, salt and pepper and mix well until you have a malleable mixture.

3. Form rösti:
Form small rösti from the mixture - approx. 6-8 pieces depending on the size. Flatten the surface slightly so that they cook evenly.

4. Frying:
Heat a little oil in a pan. Fry the rösti over a medium heat for 3-5 minutes on each side until golden brown and crispy. Drain on kitchen paper.

5. Serve:
Serve the vegan rösti hot - ideal with plant-based yogurt dip, apple sauce, herb quark or a fresh salad.

  • 500 g potatoes (preferably floury)
  • 2 tbsp flour (e.g. wheat or spelt flour)
  • Salt (to taste)
  • Pepper (freshly ground, to taste)
  • Oil for frying (e.g. rapeseed oil or sunflower oil)
