Preparation
1. Mix the chia pudding:
Mix the chia seeds with the plant milk, agave syrup and vanilla extract in a bowl. Leave the mixture to soak in the fridge for at least 2 hours or overnight until it reaches a pudding-like consistency.
2. Puree the mango:
Peel the mango, cut the flesh from the stone and process in a blender or with a hand blender to a fine puree.
3. Layer the dessert:
Pour a layer of chia pudding into small glasses, top with a layer of mango puree and garnish the dessert with fresh berries as desired.
