Vegan Kaiserschmarrn: The Fluffy Classic Entirely Egg-Free

Preparation

1. Mix dry ingredients:
In a large mixing bowl, thoroughly combine the flour, sugar, and baking powder while dry.

2. Stir in wet ingredients:
Add the plant milk, liquid coconut oil, and vinegar to the dry ingredients and whisk quickly until a smooth batter forms.

3. Fold in sparkling water:
Gently fold the sparkling water into the batter to ensure the carbonation provides maximum fluffiness, then stir in raisins if desired.

4. Bake in the pan:
Heat a small amount of additional oil in a large pan, pour in a portion of the batter, and bake over medium heat until the bottom is lightly browned.

5. Flip and shred:
Carefully flip the batter in the pan, quarter it, and cook the other side until fully done, then use two spatulas to tear it into rustic, large pieces.

6. Serve:
Toss the finished Kaiserschmarrn pieces briefly in the pan and serve warm, dusted with powdered sugar according to your personal preference.
