Vegan Peanut Chilli Noodles

Fiery hot, ready in a flash, and delicious like in a Chinese street food stall: Chinese street food at its best.

Preparation

1. Cook noodles:
Cook the wavy Chinese noodles in boiling salted water according to the package instructions. Drain the water afterwards.

2. Mix sauce base:
Combine the minced garlic, peanut butter, chopped peanuts, tahini, soy sauce, chilli oil, lemon juice, hot water, and sesame seeds in a large bowl.

3. Emulsify sauce:
Whisk the ingredients together until a creamy and glossy sauce forms. The hot water helps the fats bind perfectly.

4. Combine components:
Add the cooked noodles and most of the finely chopped spring onions to the bowl with the sauce. Toss the noodles thoroughly until every strand is completely coated.

5. Garnish and serve:
Scatter the remaining spring onions and a few additional sesame seeds over the dish. Serve immediately.

  • 2 tbsp soy sauce
  • 2 tbsp chilli oil
  • 1 tbsp lemon juice
  • 5 tbsp hot water
  • 2 tbsp sesame seeds
