
High-Protein Microwave Apple Crumble

Preparation
1. Prepare apple base:
Cut the apple into bite-sized chunks and place them into a microwave-safe bowl along with the cinnamon. Microwave for 1 minute until the apple chunks are slightly softened and juicy.
2. Mix crumble topping:
Combine the oats, vegan protein powder, and an extra pinch of cinnamon in a separate small bowl. Add water or plant based milk a few teaspoons at a time and stir until clumpy crumbles form.
3. Bake the crumble:
Pour the protein crumble mixture evenly over the warm apple chunks. Return the bowl to the microwave and heat for another minute until the crumble topping sets.
4. Add topping:
Remove the warm crumble from the microwave and add the cold coconut yogurt on top immediately before serving.
