
Vegan Crêpes with Cinnamon Apple Filling

Preparation
1. Mix the batter & leave to rest:
Place all the batter ingredients in a bowl, mix to a smooth batter and leave to rest for 5 minutes - this will make your crepes particularly fluffy.
2. Prepare the apple and cinnamon filling:
Peel, core and finely dice the apples. Roast briefly in a pan, add the agave syrup and cinnamon and allow to caramelize briefly.
3. Fry the crepes:
Heat a non-stick pan with a little oil. Pour in a small ladle of batter, toss and fry until golden brown (approx. 1 min. per side). Repeat until the batter is used up.
4. Filling & serving:
Spread the warm cinnamon apple filling on the crepes, optionally sprinkle with caramelized sunflower seeds and serve immediately.
