
Tuscan Bean Stew with Seitan Sausages

Preparation
1. Preparation and Searing:
Slice the seitan sausages into even rounds. Peel and finely chop the garlic. Finely chop the fresh rosemary as well. Heat a small amount of oil in a pot and sear the sausage slices over medium-high heat until browned.
2. Infusing Flavors:
Add the chopped garlic and chopped rosemary to the pot with the seitan sausages. Sauté briefly for about one minute until fragrant.
3. Simmering:
Place the white cannellini beans in a sieve, rinse thoroughly with cold water, and drain well. Add the drained beans and the canned diced tomatoes into the pot. Stir well to combine and let the mixture simmer over medium heat for about 5 minutes.
4. Seasoning and Serving:
Season the stew generously with salt and plenty of freshly ground black pepper. Divide into two bowls and serve hot.
